Oat Meal Chocolate Chip Cookies

Is there anything better than fresh baked cookies? The answer is no. Try these amazing cookies for yourself.

Time to make: 30 minutes. Makes: 12-18 cookies.

Ingredients

  • 150g unsalted butter

  • 155g brown sugar

  • 60g coconut sugar

  • 1 egg

  • 2 teaspoons of vanilla extract

  • 265g oat meal

  • 1/2 teaspoon of baking soda

  • 1/2 teaspoon of salt

  • 125g cooking dark chocolate

Method

  1. Pre-heat oven to 177C and line a baking tray with paper.

  2. Cream together the butter and sugars with an electric mixer. Mix in the egg and vanilla.

  3. In another bowl, mix together the oat meal, baking soda, and salt.

  4. Combine the wet and dry ingredients until a dough forms. Mix in the cacao nibs with a spoon.

  5. Roll the dough into balls and place on the baking tray with enough room for spreading.

  6. Bake for 10-12 minutes until golden. If you like a soft cookie, cook for 10 but if you like a crispier cookie, go for 12 minutes.

  7. Allow to cool and then enjoy!

Notes

Almond meal would also work amazing in this recipe.
